Cauliflower Crust Pizza
/I absolutely LOVE pizza! I mean who doesn't? Being the health nut that I am, I’m constantly searching for ways to make unhealthy food “healthy.” When cauliflower pizza crust was discovered, I immediately jumped for joy! Finally, a way to eat pizza without the carbs and the guilt! Ok, maybe a little bit of guilt because of the cheese, but at least we can check one vice off the list.
This past weekend was the first time I made cauliflower crust pizza, and wow, was I blown away! Besides the crust’s texture being a little softer, I barely noticed a difference in the taste. To my surprise, this pizza was actually MORE flavorful than regular pizza I've made in the past. It does take more time to make, but trust me it’s worth it! I topped my pizza with prosciutto, tomatoes, garlic, and arugula, but you can top yours with anything you want! Now let's get creative and start cooking!
Ingredients
Cauliflower Crust-
- 1 small head or 2/3 large head of Cauliflower
- ½ cup grated Parmesan cheese
- ¼ teaspoon Sea salt or Garlic salt
- ½ teaspoon Dried Oregano
- ½ teaspoon Garlic Powder
- 1 Egg
Toppings-
- Tomato Basil pasta sauce
- ½ cup grated Parmesan cheese
- 2 slices of Prosciutto
- 1 Tomato, diced
- 2 cloves of Garlic, diced
- Top with fresh Arugula and drizzle with Olive Oil
Directions
1. Wash and thoroughly dry the cauliflower.
2. Cut off the florets. You don’t need the stem.
3. Pulse in a food processor until you get cauliflower “snow”. You should end up with 2 to 3 cups.
4. Cover the cauliflower and microwave for about 4 or 5 minutes.
5. Dump the cauliflower onto a paper towel and let it cool.
6. Preheat the oven to 450ºF. Place your cookie sheet or pizza pan in the oven to warm.
7. This step is EXTREMELY important in order to obtain a firm, not mushy, crust. Pat the cauliflower down with another paper towel. I went through 4 sheets to get all the moisture out. You can also place the cauliflower in a dish cloth to wring out any excess moisture. You want the cauliflower to be as dry as possible before moving to the next step.
8. Combine the Parmesan cheese, sea salt or garlic salt, dried oregano, garlic powder, and cauliflower in a medium bowl.
9. Mix it together with a spoon to combine the ingredients. Then add the egg and use your hands to form the mixture into a dough ball.
10. Take your warmed cookie sheet or pizza pan out of the oven and coat with olive oil. Pat the dough down gently, using your hands to form a circle about 1/4″ thick.
11. Bake the crust without any toppings for about 8 to 11 minutes until it’s golden brown.
12. Remove from the oven and add your toppings.
13. Bake for another 5 to 7 minutes with your toppings.
14. Cool for 10 minutes to let the crust set. Then slice, eat, and enjoy!
